Wine Making:

- Grapes were hand-selected, crushed, and underwent 2 days of cold maceration before yeast inoculation. Fermentation took place in small bins with regular punch-downs, maintaining a temperature between 22 & 30°C until dry on skins. Malo-lactic fermentation was completed in tank before racking to barrel. The wine matured in French and Hungarian barriques for 10 months (5% new).
