- Grapes were hand-picked, whole bunch pressed, with no skin contact, and allowed to settle for 24 hours. Co-fermentation occurred with selected yeast strains at 12-18°C in an egg fermenter. The wine was aged on the lees for 1 month, then racked off the gross lees, sulphured, and left on fine lees until bottling. Before bottling, the wine was stored in stainless steel tanks at below 12°C, cold stabilized, and filtered. No additional acid, sugar, etc., were added.
Wine Maker’s Remarks:
- Colour: Salmon Pink
